Nourishing Banana Bread


Are you tired of recipes that claim to be healthy but they're actually chalk full of oil, eggs, sugar, and gluten?


If you're looking for a guilt-free, nourishing, comforting banana bread to dig in to, look no further! This is not only made from whole foods, but is absolutely delicious!


You're going to love this recipe and you won't feel guilty about it either!


Ingredients:


2c organic, certified GF oat flour - I make mine by blending in the Vitamix. If you blend yourself, you will need more than 2c oats to get 2c of oat flour. Alternatively, you can purchase oat flour


4 ripe bananas - medium/large sized... not too small but not massive. The more ripe they are, the better.


1tsp EACH: baking soda, baking powder, cinnamon


1/4-1/2 tsp nutmeg


1tsp vanilla extract


1/4 c plant-based milk - again, you can use home made


2 TBS freshly ground flaxseed (or chia seeds. I used flax) + 4 TBS water to make "egg"


1/4-1/2 c raisins (optional but delicious)


You can add walnuts or pecans or a couple tablespoons of maple syrup. I did not add these for my recipe.


Instructions:

1) Preheat oven to 350F

2) Mix the ground flax or chia with water to make the "egg" and let stand 5-10 min until it thickens. Stir occasionally.

3) Mash the bananas in a large bowl and add the plant milk, vanilla, and flax egg. Stir well.

4) In another bowl, whisk together the dry ingredients (flour, baking soda, baking powder, cinnamon, and nutmeg)

5) Combine wet and dry ingredients

6) Mix in raisins &/or nuts

7) Line a loaf pan with unbleached parchment paper (or lightly spray with cold pressed EVOO or avocado oil if no paper is available) and pour the batter into the pan

8) Bake for about 35-55 min**

9) Let cool in pan for about ten min then remove to finish cooling


**Depending on your oven, you may need slightly more or less time. I cooked mine in our multi-function air fryer on the convection oven setting. I checked mine at 35 min and it was nearly done so I turned the oven off and let the loaf remain in the closed oven for another 5-10 min and the results were fantastic. You may want to check your loaf around the same time and adjust baking time as needed!
