Creamy Cashew Caesar Dressing (WFPB/vegan, no oil or refined sugar)

This is one of my favorites and it's absolutely delicious, even without nutritional yeast!
1/2 cup raw cashews soaked in hot/boiling water for ten minutes the drained
Juice of 3-4 medium sized lemons. I prefer a bit more for tartness
One large clove of garlic
One small to medium peeled zucchini
1/4 cup capers (without brine or low/no sodium variety if you’re looking for low salt)
2-3 Large, soft medjool dates (or 2Tbs maple syrup)
Dash pepper to taste
Mix in a high speed blender then add water 2Tbs at a time until you reach your desired consistency!
Makes almost to cups or 3-6 servings of dressing (depending on how much you use)
Will store in the fridge for 3-5 days. Not going to use it that quickly? Make a half batch!
For lower fat per serving, you can always reduce the amount of cashews or increase the amount of water or zucchini.
