Maple Mustard Dressing (Vegan Honey Mustard) - No Oil, Refined Sugar, or Added Salt

Ingredients:

1/2 cup Raw Cashews

1/4 cup Maple Syrup

1/4 cup Dijon Mustard

2 Medium Cloves of Garlic

Juice from 2 Medium Lemons

1 Small Green or Yellow Zucchini


Instructions:

Add cashews to a bowl and add hot or boiling water. Soak until you're ready for them.

Peel and chop the zucchini and add it to a high speed blender.

Add the garlic, lemon juice, maple, mustard (the mustard you choose may have salt in it), and zucchini to a blender.

Strain cashews and add to the blender.

Blend until creamy and smooth.


You can also replace the maple syrup with some ooey gooey dates if you prefer a whole food sweetener. Use 2-4 large dates. Make sure they're nice and soft. If they're not, soak them in hot water for 5-10 minutes before blending!


You can tweak ingredients here if you want to add more of anything or add some water for a thinner consistency.
